This dish is a delicious addition to lunch and dinner menus. The minty soft fetta sauce also works well with any grilled meat or fish.
Time 25 minutes
1 cup extra virgin olive oil
6 tbsp fresh rosemary leaves, chopped
6 tbsp dried oregano
Zest and juice of 3 lemons
6 garlic cloves, minced
36 lamb cutlets
Sea salt and freshly ground pepper to season
Minty soft fetta
600g Lemnos Smooth Danish Fetta
360g Pauls Professional All Natural Yoghurt
3 cups mint leaves, chopped
Combine olive oil, rosemary, oregano, garlic, lemon zest and juice in a bowl. Season to taste and add lamb. Rub herb mixture into meat cover with cling wrap and marinate in fridge for 15 minutes.
Blend Lemnos Smooth Danish Fetta, Pauls Professional All Natural Yoghurt and mint in a food processor until smooth. Season to taste. Cover and set aside. Preheat hot plate to medium-high. Cook lamb to customers liking, turning occasionally. Set aside for 5 minutes to rest, then serve.
Serve with minty soft fetta sauce and fresh green salad.
