This light and flavour filled pasta is a great choice for lunch or dinner menus. The colour pallette is a great choice when incorporating seasonal changes into your menu plan.
Time 30 minutes
6 tbsp olive oil
3 medium red onions, cut into wedges
6 long red chillies
540g Lemnos Haloumi
6 cups cherry tomatoes, halved
750g pasta of your choice
1.5 cups fresh flat leaf parsley
¾ cup of basil leaves
Juice of 3 lemons
Sea salt and ground pepper to taste
Cook pasta of choice and drain.
Add onion and chilli to olive oil in a large pan over medium heat. Cook for 2-3 minutes, until soft. Remove.
Add Lemnos Haloumi and fry for 2-3 minutes until all sides are golden. Return onion and chilli with tomatoes, pasta, fresh herbs and lemon juice. Mix and season generously with salt and pepper.
Garnish with extra basil or parsley leaves. Serve hot.
