This versatile recipe can be incorporated into either dessert or breakfast menus. The flavour can also be changed depending on seasonal fruit availability.
Time 10 minutes
6 cups granola
3 cups Pauls Professional Greek Yoghurt
6 cups coconut water
900 g blueberries
900g strawberries, hulled and quartered
Vanilla essence to taste
Combine half the coconut water with blueberries (leave 6 tbsp aside) in a blender. Pulse until thick smoothie consistency is achieved. Pour into small bowl.
Clean out blender. Repeat process with strawberries (leave 6 tbsp aside) and remaining coconut water. Pour into small bowl.
Mix yoghurt and vanilla in separate bowl until combined.
In a tall glass, begin layering the components, starting with yoghurt, then strawberry, then granola, then yoghurt, then blueberry, and granola. Top with extra fruit. Serve immediately.
