Max talks about how Sunday lunch at his Nonna’s inspired a passion for cooking that led to him winning the 2018 Appetite for Excellence Young Chef of the Year. From there to becoming Head Chef at acclaimed Adelaide pasta bar, Nido, Max understands the importance of sourcing high quality ingredients and building trusting relationships with suppliers in a competitive industry where consistency is key to success.
Becoming Head Chef at Adelaide pasta bar, Nido, presented Max with plenty of challenges. The first, opening himself up to the advice of others when it was time to build a menu he could be proud of. Having made contact with some big names upon winning the A4X program, Max is grateful for their ongoing support and advises aspiring young chefs to find a mentor to help them on their journey.
